Peanut Butter Protein No Bake Cookies

Sorry all it’s been a while!

December is a crazy month in my family what with several birthdays, the holiday craziness, plus winter is the busiest time at work as well.

I had hoped to create recipes throughout the chaos, but I quickly realized I was going to have to choose between recipe creation or my family. It didn’t take a lot of consideration to realize that family was most important to me, and spending quality time with them was something I would never regret.

Now, we have made it through the holidays and things have slowed down some. I think.

This past week I was able to dedicate some time in the kitchen, and I’m happy to finally be able to share another recipe with you!

This recipe is a twist on one of my personal favorites, my Chocolate No Bake Cookie Recipe. We all have busy schedules, and finding time to bake a healthy treat is sometimes not feasible.

During those crazy work weeks, I often gravitate towards either my Chocolate No Bakes, or this delicious Peanut Butter No Bake Cookie recipe!

These cookies only take about fifteen minutes to make, (minus the set up time) and are absolutely delicious!

They are packed with peanut butter, and Vanilla Mölk (factually the best protein powder out there) making them an excellent way to get that extra hitter of protein while satisfying your sweet tooth!

Warning – If you eat these daily, you may find yourself with Hulk like strength. This may result in accidentally pulling doors off hinges, breaking various household items, and running faster than your car. 🙂 

Ingredient List

1/3 Cup Salted Butter

1/2 Cup Unsweetened Peanut Butter

3/4 Cup Vanilla Mölk

1/4 Cup Powdered Erythritol (or your favorite powdered sweetener)

1 Teaspoon  Vanilla Extract 

3/4 Cup Sliced Almonds

1 Cup Unsweetened Shredded Coconut

1/2 Cup Pumpkin Seeds

 

How to Make Peanut Butter Protein No Bake Cookies

Begin by laying a sheet of wax paper on a cookie sheet.

In a small saucepan over medium heat add your butter and peanut butter. Stir often with a spoon or spatula until both butters have melted and you have a smooth and creamy mixture.

Once the butters are melted, remove the pan from heat and add the protein powder, and sweetener.

Mix until well combined.

Add the vanilla, sliced almonds, coconut, and pumpkin seeds. Stir again until evenly incorporated.

 

Using a large spoon or a cookie scoop, drop heaping spoonfuls of the mixture onto the wax paper.

Place the tray of cookies in the refrigerator and let them chill for about an hour or until set. Once they have set you eat one, two, or even three… then store the rest in an airtight container in the refrigerator for up to two weeks.

I’ve found if I do want these cookies to last two weeks I generally have to make more than one batch. 🙂
