Low Carb Garlic Cheddar Biscuits
Looking for a scrumptious keto friendly biscuit? You came to the right place! These low carb garlic cheddar biscuits are soft, cheesy, and oh so delicious! Dip them in some melted garlic butter, and you have yourself a super tasty, mouth watering treat!
When I first tasted these, I immediately thought of the well known Red Lobster cheesy garlic biscuits, that I had enjoyed before I began my low carb journey. In my opinion, these are the low carb version of a red lobster biscuit, and are just as addicting.
The Secret Ingredient
As I have baked more and more low carb recipes, I have found protein powders to be one of my favorite ingredients, and not just because I need lots of proteins.
Gluten itself is made up two types of protein, glutenin and gliadin. Glutenin contributes to the elasticity in your baked goods and gliadin stability. While these proteins are awesome in helping create great textures in breads, they are not a protein that’s truly good for you as it is difficult to digest and is loaded with carbohydrates.
However, egg white protein powder or a good whey protein powder such as (Jocko Molk) are good for you. The proteins in these can be digested easier, and don’t have the carb count wheat does. While these proteins do not have the exact same qualities as glutenin and gliadin, they do possess some of them, and do help give your baked goods some bread like qualities.
By pairing protein powders with other flours such as almond flour or coconut flour I have found I have been able to get a lighter, airier product. Add some eggs for additional stability and you have a great foundation for a low carb recipe.
This particular recipe calls for Egg White Protein Powder which is lighter and fluffier than your whey protein powders. This paired with cream cheese is a HUGE contributor to the soft fluffy texture these biscuits have, and is definitely an ingredient not to be over looked!
Ingredient List
1 Cup Finely Ground Almond Flour
1/4 Cup Egg White Protein Powder
1/2 Tablespoon Baking Powder
1/2 Teaspoon Salt
1/2 Teaspoon Garlic Powder
4 Ounces Cold Cream Cheese (Cut into cubes)
1 Large Egg
1/2 Cup Shredded Cheddar Cheese
For The Butter Brush
2 Tablespoons Salted Butter
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Himalayan Pink Salt
1/2 Teaspoon Parsley Flakes
Making Low Carb Garlic Cheddar Biscuits
In a medium sized mixing bowl, add your flour, egg white protein powder, baking powder, salt and garlic. Mix together with a fork or whisk until everything is well mixed and evenly distributed.
Next take your chilled cream cheese and cut it into cubes. Using a pastry cutter cut in the cubes of cream cheese until you have a dry crumbly mixture.
You can also do this in a food processor if you would prefer. I personally love working the dough with a pastry cutter, and mixing by hand. Either method brings the same result, and if you love using your food processor, then go ahead and use it!
Once your cream cheese has been cut in, add the egg and mix again until just combined. Next mix in your cheddar cheese by hand until evenly distributed.
Roll the dough into 1 1/2 inch balls and place on a baking sheet lined with parchment paper. Lightly flatten the dough with the palm of your hand, then place the biscuits in the oven.
Bake at 350° F for 15 to 18 minutes or until your biscuits have began to turn golden brown and are firm to the touch.
Brush with melted butter, seasoned with some more garlic, Himalayan Pink Salt, and parsley. Enjoy warm with dinner, lunch, or for a tasty snack!
